Ingredients
- 1/4 pound butter, softened
- 1 1/2 teaspoons honey
- 1/2 teaspoon fresh mint, chopped
- 4 medium sweet potatoes
How To Make baked sweet potatoes with honey-mint butter

Step 1For the butter: Cream butter, then beat in honey and mint. Season with salt, and 1/8 teaspoon pepper; set aside. Scrub potatoes.

Step 2Cooking: Adjust oven rack to middle position and heat oven to 450ºF. Bake sweet potatoes until tender, about 1 hour.

Step 3Serving: Cut potatoes open and fill each with a dollop of butter.
