Ingredients
- 4 large baking potatoes
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 medium onion chopped
- 1 large jalapeno seeded and chopped
- 8 ounces ground beef
- 1 teaspoon cumin
- 2 tablespoons tomato paste
- 1 cup drained red kidney beans
- 1 cup shredded cheese
- sour cream and chives for serving
How To Make baked potatoes with tex mex chili

Step 1Clean the potatoes and rub oil on them. Preheat oven 425 degrees. Place in oven and bake for 45 minutes.

Step 2Meanwhile add oil to a large skillet. Add the onion, jalapeno, and garlic and saute until softened. Add the ground beef and cook until no longer pink. stir in the cumin tomato sauce, tomato paste and 4 tbsp water.. Simmer for 20 minutes. Stir in the kidney beans.

Step 3Taste and season with salt and pepper. When the potatoes are done cut them in half. Spoon the chili on top of the potatoes. Top with cheese, sour cream and chives.
