Ingredients
- 4 large idaho potatoes scrubbed
- 1 cup corn kernels
- 8 ounces soft butter
- 1 shallot chopped
- 1 teaspoon lime juice
- 3 tablespoons chives chopped
- salt and pepper
How To Make baked potato with shallot corn butter

Step 1Preheat oven 400 degrees. Prick the potatoes with a fork. Bake the potatoes until a fork goes in easily Remove from oven and cut down the middle. Season with salt and pepper

Step 2Cook the corn kernels in boiling water for about 3 minutes. Drain.

Step 3Place the shallots, butter, lime juice, half of the corn kernels and chives in a food processor. Process until well mixed. Stir in the other half of the corn and put on top of potatoes
