Ingredients

  • 4 large idaho potatoes scrubbed
  • 1 cup corn kernels
  • 8 ounces soft butter
  • 1 shallot chopped
  • 1 teaspoon lime juice
  • 3 tablespoons chives chopped
  • salt and pepper

How To Make baked potato with shallot corn butter

  • Step 1
    Preheat oven 400 degrees. Prick the potatoes with a fork. Bake the potatoes until a fork goes in easily Remove from oven and cut down the middle. Season with salt and pepper
  • Step 2
    Cook the corn kernels in boiling water for about 3 minutes. Drain.
  • Step 3
    Place the shallots, butter, lime juice, half of the corn kernels and chives in a food processor. Process until well mixed. Stir in the other half of the corn and put on top of potatoes
