Ingredients
- 8 medium yukon gold potatoes
- 1 stick butter softened
- 2 tablespoons mayonnaise
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon chives minced
- 1 teaspoon each garlic powder & salt
How To Make baked potato with mozzarella chive butter

Step 1Preheat oven 400 degrees. Wash potatoes and score them in an X fashion but don't cut all the way through. Place on parchment lined baking tray. Bake for 35 minutes until almost done.

Step 2Mix the butter, mayo, cheese, chives, garlic powder and salt together. Place a scoop into the middle of each potato and bake another 5 to 10 minutes until cheese is melted and potatoes are tender. Serve immediately.
