Ingredients

  • 8 medium yukon gold potatoes
  • 1 stick butter softened
  • 2 tablespoons mayonnaise
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon chives minced
  • 1 teaspoon each garlic powder & salt

How To Make baked potato with mozzarella chive butter

  • Step 1
    Preheat oven 400 degrees. Wash potatoes and score them in an X fashion but don't cut all the way through. Place on parchment lined baking tray. Bake for 35 minutes until almost done.
  • Step 2
    Mix the butter, mayo, cheese, chives, garlic powder and salt together. Place a scoop into the middle of each potato and bake another 5 to 10 minutes until cheese is melted and potatoes are tender. Serve immediately.
