My son gave me a bag of fresh spinach,straight from his home garden. He knows my love of spinach! A made a spinach salad for lunch. Then having some spinach left over I devised this recipe to use the spinach while it was so nice and fresh. I call it my "Grecian Delight" This is a quick and very simple dish to prepare. I hope you will enjoy it as much as I did.. This recipe is for one person (me) but you can increase the ingredients for a family to enjoy. Nancy... May 20,2013

Ingredients

  • 1 md
    bag of spinach
  • 1 clove
    garlic...minced
  • 1 Tbsp
    olive oil
  • 1 md
    potato...to bake
  • 1/4 c
    feta crumbled cheese
  • 1 dash
    apple cider vinegar...to taste

How To Make

    Put the olive oil in a large skillet . Wait. Wash and pat dry the spinach. Remove stems, then chop spinach up, in narrow strips. Peel and mince the garlic. Put the potato in the microwave prick the potato with a fork,(for the steam to escape) and bake the potato. Now, heat skillet and oil,quickly add the spinach, and garlic. Sautee till done, stirring all the time. Cooked spinach will be greatly reduced. !!

    Cut the potato open, mash a little and top with the cooked spinach. Add the crumpled up feta cheese. Splash on a wee bit of apple cider vinegar... this is up to you! Now enjoy... Grecian Delight!

    Maybe a sliced tomato on the side, would go great with this dish. Sprinkled with olive oil and dill seed....YUMMY!

    Perhaps a little glass of Ouzo liquor to sip on the side! OOPA!!!!
