Tried this & adapted it a little w/fresh basil. Filling and delicious...

Ingredients

  • 1 package pizza dough, usually comes in two separate balls
  • dash flour
  • 2 cloves garlic, minced
  • 1/2 large sweet onion, very finely sliced i just soaked a yellow onion in some sugar water & drained
  • 6 slices bacon, cooked
  • 2-3 tablespoons basil, fresh & julienned
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 2 pinches parmesan cheese, grated, to taste
  • 1 1/2 cups sour cream
  • 4 - roma tomatoes, diced
  • 1/4 cup chives, finely chopped (i use scissors)
  • 4 - yukon gold potatoes
  • 1 dash olive oil
  • 1/2 tablespoon corn meal

How To Make baked potato pizza

  • Step 1
    Preheat oven with pizza stone to 500 degrees
  • Step 2
    Evenly divide dough into two pieces. Use flour on board. Stretch to fit.
  • Step 3
    Fill a large bowl with cold water. Using a mandolin (or very sharp knife) slice potatoes paper-thin. I used a sharp knife and my arm still aches! Put potatoes in water. Swirl to remove excess starch & prevent potatoes from turning brown. Drain & pat dry with paper towels. Place back in bowl
  • Step 4
    Add garlic, onion, & crumbled bacon to potatoes in bowl. If you used yellow onion soaked in water, drain well.
  • Step 5
    Season with salt and pepper. Drizzle a little olive oil over. Mix well
  • Step 6
    Mix and add mozzarella & cheddar cheeses, dividing evenly between pizzas
  • Step 7
    Top with salt, pepper, and the Parmesan.
  • Step 8
    Bake pizzas in oven for 8-10 min. Crust should be golden brown, potato edges a little curled, and cheese is bubbly.
  • Step 9
    To serve, top with a dollop of sour cream, diced tomatoes, basil, chopped chives, to taste.
