Ingredients For baked potato pizza
-
1 pkgpizza dough, usually comes in two separate balls

dashflour
-
2 clovegarlic, minced
-
1/2 lgsweet onion, very finely sliced i just soaked a yellow onion in some sugar water & drained

6 slicebacon, cooked
-
2-3 Tbspbasil, fresh & julienned
-
1 tspkosher salt
-
1/2 tspfreshly ground black pepper
-
1 cmozzarella cheese, shredded
-
1 ccheddar cheese, shredded
-
2 pinchparmesan cheese, grated, to taste
-
1 1/2 csour cream
-
4roma tomatoes, diced
-
1/4 cchives, finely chopped (i use scissors)
-
4yukon gold potatoes
-
1 dasholive oil
-
1/2 Tbspcorn meal
How To Make baked potato pizza

1Preheat oven with pizza stone to 500 degrees
-
2Evenly divide dough into two pieces. Use flour on board. Stretch to fit.

3Fill a large bowl with cold water. Using a mandolin (or very sharp knife) slice potatoes paper-thin. I used a sharp knife and my arm still aches! Put potatoes in water. Swirl to remove excess starch & prevent potatoes from turning brown. Drain & pat dry with paper towels. Place back in bowl

4Add garlic, onion, & crumbled bacon to potatoes in bowl. If you used yellow onion soaked in water, drain well.

5Season with salt and pepper. Drizzle a little olive oil over. Mix well

6Mix and add mozzarella & cheddar cheeses, dividing evenly between pizzas
-
7Top with salt, pepper, and the Parmesan.

8Bake pizzas in oven for 8-10 min. Crust should be golden brown, potato edges a little curled, and cheese is bubbly.

9To serve, top with a dollop of sour cream, diced tomatoes, basil, chopped chives, to taste.
