1 pkg
pizza dough, usually comes in two separate balls
2 clove
garlic, minced
1/2 large
sweet onion, very finely sliced i just soaked a yellow onion in some sugar water & drained
6 slice
bacon, cooked
2-3 Tbsp
basil, fresh & julienned
1 tsp
kosher salt
1/2 tsp
freshly ground black pepper
1 c
mozzarella cheese, shredded
1 c
cheddar cheese, shredded
2 pinch
parmesan cheese, grated, to taste
1 1/2 c
sour cream
roma tomatoes, diced
1/4 c
chives, finely chopped (i use scissors)
yukon gold potatoes
1 dash(es)
olive oil
1/2 Tbsp
corn meal


1Preheat oven with pizza stone to 500 degrees
2Evenly divide dough into two pieces. Use flour on board. Stretch to fit.
3Fill a large bowl with cold water. Using a mandolin (or very sharp knife) slice potatoes paper-thin. I used a sharp knife and my arm still aches!
Put potatoes in water. Swirl to remove excess starch & prevent potatoes from turning brown. Drain & pat dry with paper towels. Place back in bowl
4Add garlic, onion, & crumbled bacon to potatoes in bowl. If you used yellow onion soaked in water, drain well.
5Season with salt and pepper. Drizzle a little olive oil over. Mix well
6Mix and add mozzarella & cheddar cheeses, dividing evenly between pizzas
7Top with salt, pepper, and the Parmesan.
8Bake pizzas in oven for 8-10 min. Crust should be golden brown, potato edges a little curled, and cheese is bubbly.
9To serve, top with a dollop of sour cream, diced tomatoes, basil, chopped chives, to taste.
