baked potato and veggie ring
This idea came to me when I wanted to grill some veggie kebabs but didn't want to leave my kitchen. I will be making these again! You can use any veggies as long as they will cook in the amount of time it takes the potatoes to cook. You can also use any cheese or variation of cheeses.

Ingredients
- 6 medium red potatoes
- 1 - ea. red, yellow & orange bell
- 1 - anaheim pepper
- 1 - red onion
- - **favorite potato seasoning
- - **olive oil
- - **favorite cheese or cheeses
How To Make baked potato and veggie ring

Step 1Wash skins of potatoes and dry. I used a mandolin (med.cut) to slice the potatoes into rounds. You can slice the peppers into rings or cut into large pieces, onion as well. Place all in a large bowl and drizzle well with olive oil and season with your favorite potato seasoning. Toss really well to evenly coat everything.

Step 2Start layering potato, veggie, potato, veggie in a ring around oven proof skillet. I used a 13" cast iron skillet.

Step 3Cover and bake 350° for about 30 min, remove cover and bake another 25-30 min. Once potatoes are fork tender sprinkle on your favorite cheese or cheeses. I used mozzarella. Turn on broiler to low and melt and lightly brown cheese.

Step 4Allow to cool for about 15 min. before serving.
