baked potato and sausage casserole

I started with a baked potato casserole recipe given to me by my mother-in-law and added my own flair to it! We love this on cold winter nights...

Ingredients

  • 1 lg. cart - sour cream
  • 1 lg. cart - cottage cheese, small curd
  • 1 - turkey sausage, the horseshoe shaped one
  • 10 - medium potatoes, peeled and cut into bite sized pieces
  • 1 - lg onion, diced
  • 2 cups - shredded cheese, i like the new colby/jack blend with philadelphia cream cheese added
  • - salt and pepper to taste

How To Make baked potato and sausage casserole

  • Step 1
    Peel the potatoes and cut into bite sized pieces. Boil until almost done. While the potatoes are boiling, mix the lg. carton of sour cream and the lg. carton of cottage cheese together with the diced onion (if you have picky eaters that don't like onion, try onion powder). Add salt and pepper to taste. Slice the turkey sausage into bite sized slices, (I cut mine in half also). When the potatoes are done, mix the sour cream mixture, sausage and potatoes together in a large casserole dish. Sprinkle with the cheese. Bake at 350 degrees for about 1/2 an hour until bubbling. Remove from oven and let stand 5 minutes. Enjoy! Add broccoli florets for a complete meal idea!
