Baked cucumbers are quite common in French cuisine. As you know, I am half French and half Italian. Sometimes, I like to add both bacon and cheese to this on occasion. But the choice is yours. Walnuts are also a nice inclusion too.

Ingredients

  • 12 - parisian cucumbers, cut into small spears
  • 1 can clams, undrained
  • 1 cup corn
  • 4 - potatoes, diced
  • 2 cups cream
  • 1/2 stick butter
  • 2 cups broth, beef or ham
  • 3 tablespoons dill
  • 1 tablespoon italian seasoning
  • 1/2 cup wine
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons seasoning salt

How To Make baked parisian cucumber with clam cream sauce

  • Step 1
    Choose Parisian Cucumbers.
  • Step 2
    Slice cucumbers and place in refrigerator.
  • Step 3
    Place the rest of the ingredients in a large pot. Bring to a boil, then lower to a simmer.
  • Step 4
    Cook for 2-3 hours, stirring frequently.
  • Step 5
    Remove cucumbers from refrigerator and place in a casserole dish.
  • Step 6
    Pour sauce over cucumbers.
  • Step 7
    Bake on 350F for 30-40 minutes.
  • Step 8
    This recipe can optionally add 1/2lb of diced bacon and 1lb of shredded cheese.
