Ingredients For baked mashed potatoes and yams with garlic & parm

8 lggarlic cloves, unpeeled

3 1/2 Tbspolive oil

1 1/2 lbrusset potatoes, peeled, cut into 2-inch pieces

1 1/4 lbyams, peeled, cut into 2-inch pieces
-
1/2 cmilk
-
2 Tbspbutter
-
1 tsprosemary, minced
-
6 Tbspparmesan cheese, grated
How To Make baked mashed potatoes and yams with garlic & parm

1Preheat oven to 350F.

2Place garlic in small ovenproof cup or ramekin. Drizzle 2 tablespoons olive oil over garlic.

3Bake until garlic is very soft, about 25 minutes.

4Cool; peel garlic, reserving oil in cup.

5Brush 8x8x2-inch glass baking dish with 1/2 tablespoon olive oil.

6Cook all potatoes in large pot of boiling salted water until tender, about 25 minutes.

7Drain, reserving 1 cup cooking liquid.

8Return all potatoes to same pot.

9Add milk, butter, rosemary, roasted garlic, and reserved oil to potatoes.

10Mash until smooth and fluffy, adding enough reserved cooking liquid to thin to desired consistency.

11Mix in 3 tablespoons cheese.

12Season with salt and pepper.

13Spoon potatoes into prepared dish.

14Sprinkle 3 teaspoons cheese over potatoes; drizzle with 1 tablespoon oil. (Can be made 2 hours ahead. Cover; let stand at room temperature.).

15Preheat oven to 350F.

16Bake potatoes uncovered until heated through and golden on top, about 45 minutes.
