Ingredients
- 4 large baking potatoes
- - vegetable oil
- 1/2 cup chopped shallots
- 2 tablespoons butter, melted
- 1 cup commercial sour cream
- 1/4 cup freshly grated parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 8 slices cooked and crumbled bacon
- - paprika
How To Make bacon stuffed potatoes

Step 1Wash potatoes and rub with oil. Bake at 400 degrees for 1 hour or until soft when pierced with fork. Allow potatoes to cool to the touch.

Step 2Carefully scoop out pulp, leaving shells intact. Mash pulp; set aside.

Step 3Saute shallots in butter until tender. Add shallots and remaining ingredients, except paprika to potato pulp; stir well. Stuff potato shells with pulp mixture; sprinkle with paprika.

Step 4Place potatoes in a 9 inch square baking pan; bake at 350 for 15 minutes or until thoroughly heated. Yield 4 servings.
