I love stuffed baked potatoes. These are really good, and who doesn't love bacon???

Ingredients For bacon stuffed potatoes

  • 4 lg
    baking potatoes
  • vegetable oil
  • 1/2 c
    chopped shallots
  • 2 Tbsp
    butter, melted
  • 1 c
    commercial sour cream
  • 1/4 c
    freshly grated parmesan cheese
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 8 slice
    cooked and crumbled bacon
  • paprika

How To Make bacon stuffed potatoes

    Wash potatoes and rub with oil. Bake at 400 degrees for 1 hour or until soft when pierced with fork. Allow potatoes to cool to the touch.

    Carefully scoop out pulp, leaving shells intact. Mash pulp; set aside.

    Saute shallots in butter until tender. Add shallots and remaining ingredients, except paprika to potato pulp; stir well. Stuff potato shells with pulp mixture; sprinkle with paprika.

    Place potatoes in a 9 inch square baking pan; bake at 350 for 15 minutes or until thoroughly heated. Yield 4 servings.
