Living in small coal mining town in Missouri...we often didn't have what we needed to make all that we needed so mom improvised by using what she had. This was one of her favorite's after making it the first time when we had unexpected company...it turned out to be an often requested favorite.

Ingredients
- 2 pounds new potatoes
- 4 slices bacon, cooked
- 1 medium yellow onion chopped
- 2 tablespoons parsley
- 8 ounces sour cream
How To Make bacon smashed taters

Step 1Wash potatoes, Boil with jackets on. Smash with sour cream when they are done. Do not beat...they will be lumpy.

Step 2Brown bacon with onion.

Step 3Mix bacon and onion with potatoes. Season to personal taste. Sprinkle parsley over top for color. Serve.
