bacon & ranch potato salad
This is one of my favorite recipes. I came up with the idea a few months ago at a BBQ my husband and I hosted. Everyone that has tried it, loves it. It is delicious and a great side.

Ingredients
- - 8 large potatoes; peeled, cubed, and boiled
- - 2 stalks celery; diced
- - 1/2 cup onion
- - 12 pre cooked slices of bacon; crumbled
- - 3 hard boiled eggs; peeled, diced
- - 1 cup mayo
- - 1 tbsp dijon mustard
- - 1/4 cup ranch dressing
- - salt and pepper to taste
How To Make bacon & ranch potato salad

Step 1When potatoes are finished boiling, drain and let cool. Then begin adding the rest of the ingredients saving the bacon for last. I do this to keep the bacon crisp. Another tip I would give is using pre cooked bacon from the grocery store. 30 seconds in the microwave and you have a nice crisp bacon.
