Ingredients For bacon ranch potato salad

  • 3 lb
    russet potatoes, peeled and chopped
  • 1/2 c
    mayonnaise or salad dressing
  • 1 pkg
    ranch packet dressing
  • 1 pkg
    turkey bacon (i've tried regular and believe it or not this tastes better)
  • 1 bunch
    green onion, sliced
  • salt and pepper to taste

How To Make bacon ranch potato salad

  • 1
    Place chopped potatoes in dutch oven with enough water to cover 2 inches over potatoes. Boil until tender.

    While potatoes are cooking dice bacon and place in a microwave save dish. Cook on high until crispy 3 to 4 minutes until crispy checking them often.

    Drain and pour back into dutch oven. Mash lightly with a potato masher to break up the potatoes.

    Add cooked bacon, green onion, mayo, and ranch dressing packet to potatoes. Stir until well combined. Add salt and pepper to taste. This potato salad is great warm or chilled.
