Ingredients
- 12 - yucon gold potatoes peeled and sliced 1/4 inch thick
- 6 slices bacon
- 3 - green onions chopped
- 1/2 cup grated parmesan cheese
- - salt
- - cooking spray
How To Make bacon parmesan potato stacks

Step 1Cook the bacon and chop reserving the grease. Spray a muffin pan. Place potatoes one piece at a time in a muffin tin. Sprinkle with cheese, salt and green onions on each piece. Just put a little bit between each slice

Step 2Continue until all the tins have 1 potato in each. Top with bacon and drizzle bacon grease over top. Bake at 400 degrees for 45 minutes.
