bacon & cheese scalloped potatoes

I wanted to try a new potato recipe & this recipe was a perfect side dish to the main course which was ham. I love scalloped potatoes & I didn't want to make them from a box so I got creative & made them from scratch. I made this recipe for myself & my husband. This recipe can be doubled to feed 4-6 people.

Ingredients

  • 4 teaspoons butter, cold
  • 1/4 cup all purpose flour
  • 1 1/2 cups milk, 2%
  • 1 1/2 cups heavy cream
  • 1 teaspoon salt
  • 1 tablespoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon parsley flakes
  • 1 teaspoon hot sauce
  • 1 medium yellow onion, sliced
  • 4 medium russet potatoes, thinly sliced
  • 2 cups cheddar cheese
  • 6 slices bacon, cooked & crumbled
  • 1/2 teaspoon paprika, sweet mild

How To Make bacon & cheese scalloped potatoes

  • Step 1
    Slice onions into rings
  • Step 2
    Rinse potatoes & drain then thinly slice.
  • Step 3
    In a small pot, heat butter on medium heat until melted. Add flour. Whisk until smooth. Gradually add milk, cream, salt, 1/2 tsp. black pepper, ground nutmeg, 1/2 tsp. parsley flakes, 1c. cheddar cheese & hot sauce. Bring to a boil & stir constantly for 2 minutes or until thick. Place lid on pot to keep warm.
  • Step 4
    In a 2 qt. glass baking dish, layer potatoes & onion rings alternately starting & ending with potatoes. Pour sauce over potatoes & onions. Add remaining spices & cheddar cheese. Bake at 350 for 65 minutes. Crumble bacon on top & enjoy.
