~ awesome sweet potato casserole ~
I love sweet potato casseroles. I don't think I've ever made them the same way twice. Happy Thanksgiving!! Enjoy!

Ingredients
- 2 - 29 ounces cans, sweet potatoes, drained - or can use fresh cooked sweet potatoes ( mashed ) - i add extra sugar if using fresh. )
- 5 tablespoons butter, melted
- 1/4 cup each - brown sugar & granulated sugar
- 2 - eggs, beaten lightly
- 1 1/2 teaspoons pure vanilla extract
- 3/4 teaspoon cinnamon
- 1/3 cup plus 2 tablespoons - heavy cream
- TOPPING
- 1 cup chopped pecans
- 3/4 cup packed, brown sugar
- 1/4 cup plus 1 tablespoon flour
- 3 tablespoons melted, butter
How To Make ~ awesome sweet potato casserole ~

Step 1Preheat oven to 325 degree F. Grease a 9 x 13 baking dish or same sized casserole dish.. In a large bowl, mash potatoes, along with - melted butter, sugars, eggs, extract, cinnamon and cream. Spread mixture into prepared dish. In a dish, combine pecans, flour, butter and brown sugar. Crumble evenly over potato mixture. Bake for 30 - 40 minutes or until bubbly and topping is golden. Enjoy! Note* Sometimes I make an extra half recipe of topping.
