My Auntie made these for as long as I can remember. We knew if we were going to her house we were getting these!

Ingredients

  • 1 pint half and half
  • 26 ounces frozen hash browns
  • 8 ounces cheddar cheese, shredded (i prefer the sharp)
  • 2/3 package velveeta, cubed
  • 2 sticks butter or margarine (potatoes aren't as greasy with the butter, but the sauce sticks more)
  • - garlic salt, to taste (i've been using fresh minced since i started making these)
  • - pepper, to taste

How To Make auntie carolyn's cheesy potatoes

  • Step 1
    In sauce pan combine half and half, cheeses, and butter.
  • Step 2
    Cook over low heat until cheese is melted, stirring constantly to prevent burning.
  • Step 3
    Add garlic and salt.
  • Step 4
    Simmer uncovered for 1 hour, stirring frequently. My sisters and I cheat and don't cook it that long with no difference to the final product.
  • Step 5
    Spray 9 x 13 pan or line with foil; also does great in a disposable.
  • Step 6
    Arrange has browns evenly in pan.
  • Step 7
    Pour cheese over and stir.
  • Step 8
    Bake uncovered for 1 hour at 35o degrees or until top is slightly browned.
