Aunt Sandy's Cheesy Potato Cassarole
8 - 10potatoes, cut into cubes
1 can(s)corn, drained
1 can(s)green beans, drained
1 can(s)black olives, sliced & drained
1 can(s)mushrooms, sliced & drained
·sour cream (optional)
·extra virgin olive oil
How to Make Aunt Sandy's Cheesy Potato Cassarole
- Set oven to 350 Degrees, mix Potatoes, Corn, Green Beans, Olives & Mushrooms together in a large bowl.
Add EVOO to the mixture, just enough to coat the veggies lightly.
- Pour mixture into a cake pan, evening mixture throughout the pan. Sprinkle as much Cheese as you would like across the top of the mixture.
- Put pan into the oven and bake for 45 minutes or until cheese is melted and potatoes are soft.
Serve with a dollop of Sour Cream on top & Enjoy!
