I serve this every Thanksgiving...everyone looks forward to it!! I will post a photo when I can.

Ingredients

  • CASSEROLE
  • 1 29oz cans sweet potatoes (drained)
  • 3/4 stick butter
  • 1 lg can evaporated milk
  • 1 1/4 cups sugar
  • 1/4 cup plain flour
  • 2 eggs large (slightly beaten)
  • TOPPING
  • 1/2 cup light brown sugar
  • 1/2 cup coconut
  • 1/2 cup pecans (chopped)
  • 1 cup corn flake crumbs
  • 3/4 stick butter

How To Make aunt elizabeth's sweet potato casserole

  • Step 1
    Mix all 'casserole' ingredients together with mixer. Pour into 13"x9" dish, bake at 350 degrees for 15 minutes.
  • Step 2
    Mix all 'topping' ingredients together and top potatoes. Top with large marshmallows if desired. Bake 15 minutes more.
  • Step 3
    If desired, prepare potatoes, cook and refrigerate the day before serving. Also, mix topping and put in a covered jar or bowl in refrigerator. Baking will take about 5 minutes longer because the dish is cold.
