Ingredients

CASSEROLE

1 29oz can(s)
sweet potatoes (drained)
3/4 stick
butter
1 lg can(s)
evaporated milk
1 1/4 c
sugar
1/4 c
plain flour
2 eggs large
(slightly beaten)

TOPPING

1/2 c
light brown sugar
1/2 c
coconut
1/2 c
pecans (chopped)
1 c
corn flake crumbs
3/4 stick
butter

How to Make Aunt Elizabeth's Sweet Potato Casserole

Step-by-Step

  • 1Mix all 'casserole' ingredients together with mixer. Pour into 13"x9" dish, bake at 350 degrees for 15 minutes.
  • 2Mix all 'topping' ingredients together and top potatoes. Top with large marshmallows if desired. Bake 15 minutes more.
  • 3If desired, prepare potatoes, cook and refrigerate the day before serving. Also, mix topping and put in a covered jar or bowl in refrigerator. Baking will take about 5 minutes longer because the dish is cold.
