au gratin potatoes - simple & delish
Hubby was grilling pork chops for supper tonight and he suggested that we have Au Gratin Potatoes with them. Since I did not have a recipe for Au Gratin Potatoes I searched J.A.P. for a quick recipe but came up empty handed as far as one that had the ingredients that I had on hand at the house. A friend on Facebook...Dan Clark...suggested this recipe. It was based on "scratch notes" from his mother. It was so delish that I asked his permission to post it to JAP. So here it is with just a few minor adjustments. Pictures are mine. Posted 9/14/13

Ingredients
- 5 large potatoes (i used russets)
- 1 small onion
- 1/4 cup butter (1/2 stick)
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dry mustard
- 2 1/2 cups milk (i used skim)
- 1 cup shredded cheddar cheese (i used sargento sharp cheddar, fine cut)

- - preheat oven to 350 degrees and grease a 2 quart casserole dish (i used a 9x13 pan)
How To Make au gratin potatoes - simple & delish

Step 1Wash the potatoes. Peel them then wash them again. Slice them into very thin slices. Set aside.

Step 2Measure the flour, salt, pepper and dry mustard into a small bowl. Mix and set aside.

Step 3Put the 1/2 stick butter and the small onion, diced, into a 10" skillet and cook on medium heat until the onion is tender but not brown.

Step 4When onion is tender stir the flour mixture into the skillet and add the milk. Cook and stir until thickened and bubbly. Add the cheese, cook and stir 1-2 minutes more. Remove from heat.

Step 5Place half of the potatoes into the greased pan. Cover with half of the cheese sauce. Repeat layers.

Step 6Cover the pan with foil and bake in the preheated oven for 30 minutes. Remove from oven. Stir the potatoes. Place the foil back on the pan and bake for another 30 minutes.

Step 7Place the pan back in the oven UNCOVERED for another 30 minutes. NOTE: After this last 30 minutes if you'd like a little more cheese on your potatoes, you can put it on top of the potatoes and bake for another 10 minutes or until the cheese is melted and golden brown. I did this...Hubs did not like the extra cheese so I will not do it that way again. This extra cheese is NOT listed in the ingredients as it was NOT in the original recipe. It is something I added.
