asparagus and broccoli cheese potatoe topping

I got the base for this recipe from a Taste of Home Magazine. What a disappointment the original recipe was! No wonder I left that site and came here! Anyway I adjusted some things and added others and came up with this. The original was suppose to be a dip. This combination that I came up with is great as a topping for baked potatoes! It was so yummy even my youngest son loved it!

Ingredients

  • 1 cup cooked fresh asparagus tops
  • 1 cup cooked fresh broccoli crowns
  • 1 cup mayonnaise
  • 2 ounces cream cheese, soften
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sharp white cheddar cheese

How To Make asparagus and broccoli cheese potatoe topping

  • Step 1
    Cook your veggies and set aside. I steam mine to keep the nutrients from getting washed out.
  • Step 2
    In a large bowl combine the mayonnaise, cream cheese, parmesan and cheddar cheese. Add the cooked veggies.
  • Step 3
    Put in a 2 cup ovenproof bowl or baking dish. Bake at 350° for 20 to 25 minutes or until heated through. Use as a topping for baked potatoes.
