Ingredients

  • 2 pounds potatoes, peeled & cut in 1/2
  • 1 tablespoon olive oil, extra virgin
  • 1 large leek, white part only, cut lenghtwise in 1/2, thinly sliced
  • 5 ounces asiago cheese, grated
  • 2 tablespoons butter, softened
  • 3/4 cup bacon, cut into 1/4" pieces & cooked until crisp
  • - salt & pepper, to taste

How To Make asiago whipped potatoes with bacon

  • Step 1
    Place potatoes in a pot with cold water about 1" over top of potatoes. Bring to boil. Reduce heat & simmer 10 - 15 minutes or until tender when pierced with a fork.
  • Step 2
    Meanwhile, heat olive oil in small skillet on medium heat. Cook & stir leek 2 - 3 minutes or until tender, but not brown. Remove from heat & set aside.
  • Step 3
    Drain potatoes, reserving cooking liquid. Add grated cheese, butter & cooked leek to potatoes. Mash with a potato masher until fairly smooth, adding 1/2 - 3/4 cup of the reserved cooking liquid. While mashing, add salt & pepper to taste. Fold in the crisp bacon.
