potatoes, peeled and cut into 1-inch cubes
4 clove
garlic, peeled=2 tsp. minced
strips of bacon, cut into 1/2 inch pieces
1 c
thinly sliced scallions
1/2 c
low-fat milk, warmed
1/2 c
low fat sour cream
1 tsp
1/4 tsp
black pepper

How to Make Applebee's Bacon Scallion Mashed Potatoes


  • 1In a large pot, cover potatoes and garlic with lightly salted water. Boil until potatoes are fork tender. Fry bacon in skillet until crisp; drain on paper towels. Pour out all but 1 teaspoon of bacon grease from the pan. Add scallions to the grease and saute until soft, but not brown. Add bacon.
  • 2Drain potatoes and return to the pot. Mash potatoes with milk, sour cream, salt and pepper. Stir in the bacon and scallions. Reheat if necessary before serving.
