I sort of made this one up from a 1971 recipe for scalloped potatos, combined with another recipe for scalloped potatos and ham.... When they ask you.."what's for supper?"..and you haven't a clue? this is easy and good!...and most of us can find these ingredients around the house!....K.:)

  • 1 lb
    any kinda' meat....smoked sausage, ham, kielbasa,beef,pork, even salami, etc. cut in good size pieces
  • 1/4 c
  • 1/4 c
  • ·
    salt, pepper, garlic powder, tarragon, and parsley to taste
  • 3 c
    whole milk
  • 2 c
    shredded cheddar (or any kind) cheese
  • 1 large
    onion (sliced)
  • 4 c
    peeled and sliced potatoes
  • ·
    buttered bread crumbs

How to Make Any Kinda' Meat & Potatoe Casserole


  1. Melt butter in saucepan, blend in flour and seasonings, add milk slowly and cook, whisking constantly till smooth and thickened....add most of the cheese, and mix till melted (save some cheese for top of casserole)
  2. Arrange alternate layers of potatoe, sliced onions, meat, and cheese sauce in greased 2 qt. casserole dish!salt & pepper each layer ..Cover casserole, and Bake @ 350 degrees for about 40 min.....remove cover and top with more cheese and buttered bread crumbs and bake another 15 min. or so, or until potatoes are tender, and top is golden brown....   3. ....NOTE***....any kind of left over meat will work, too! ...Smoked Shoulder, Pot roast, Corned Beef.....ANYTHING! whatever you have!....Make it your own!...(smile!)...K. :)
