Ingredients

  • 1/2 cup finely chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup shredded carrot
  • 1 clove garlic, minced
  • - parsley, chopped
  • 2 cups chicken broth
  • 4 cups potatoes, pared and cubed
  • - salt and pepper, to taste
  • 2 tablespoons butter

How To Make amish basque potatoes

  • Step 1
    Saute onion, celery, carrot and garlic in melted butter in a 10-inch skillet until tender.
  • Step 2
    Add chicken broth, potatoes, salt and pepper.
  • Step 3
    Cover; simmer for 10 minutes. Remove cover.
  • Step 4
    Simmer, stirring occasionally, 20 minutes or until broth has thickened.
  • Step 5
    Sprinkle with parsley.
