Amish Basque Potatoes
Vicki Butts (lazyme)
1/2 cfinely chopped onion
1/2 cchopped celery
1/2 cshredded carrot
1 clovegarlic, minced
2 cchicken broth
4 cpotatoes, pared and cubed
·salt and pepper, to taste
How to Make Amish Basque Potatoes
- Saute onion, celery, carrot and garlic in melted butter in a 10-inch skillet until tender.
- Add chicken broth, potatoes, salt and pepper.
- Cover; simmer for 10 minutes. Remove cover.
- Simmer, stirring occasionally, 20 minutes or until broth has thickened.
- Sprinkle with parsley.
