- 1/2 cup finely chopped onion
- 1/2 cup chopped celery
- 1/2 cup shredded carrot
- 1 clove garlic, minced
- - parsley, chopped
- 2 cups chicken broth
- 4 cups potatoes, pared and cubed
- - salt and pepper, to taste
- 2 tablespoons butter
How To Make amish basque potatoes

Step 1Saute onion, celery, carrot and garlic in melted butter in a 10-inch skillet until tender.

Step 2Add chicken broth, potatoes, salt and pepper.

Step 3Cover; simmer for 10 minutes. Remove cover.

Step 4Simmer, stirring occasionally, 20 minutes or until broth has thickened.

Step 5Sprinkle with parsley.
