Absolutely Fabulous. (To make vegetarian version, substitute fake bacon.) GRUYERE A MUST, don't sub.

Ingredients

  • 8 slices bacon (*or substitute fake bacon for veg version)
  • 2 tablespoons olive oil, if needed
  • 1 large onion, chopped
  • 1 large shallot, chopped
  • 2 cloves garlic, chopped
  • 3 cups potatoes, any color (dice into 1/4 inch pieces)
  • 1 teaspoon salt
  • 1 tablespoon dijon mustard
  • 3 cups milk
  • 1 cup gruyere cheese, grated
  • - another 1 tsp. salt
  • - freshly ground pepper
  • - fresh chives for garnish

How To Make ali's potato gruyere chowder

  • Step 1
    In a large pot, cook the bacon according to package directions, until browned and crisp. Cool and chop into small pieces. Set aside.
  • Step 2
    In the same pot over med-high heat, add the onions, shallot and garlic. (add a little olive oil if needed.) Saute for 5 min. or until the onions start to get soft.
  • Step 3
    Add the diced potatoes and 1 tsp salt, saute for about 2 minutes. Add the mustard and milk. Bring to a boil, then simmer for about 25 minutes, or until potatoes are soft and soup thickens.
  • Step 4
    Whisk in the Gruyere cheese, another tsp. of salt, and a few pinches of pepper. Garnish with the bacon and chives.
