Ingredients
- 8 slices bacon (*or substitute fake bacon for veg version)
- 2 tablespoons olive oil, if needed
- 1 large onion, chopped
- 1 large shallot, chopped
- 2 cloves garlic, chopped
- 3 cups potatoes, any color (dice into 1/4 inch pieces)
- 1 teaspoon salt
- 1 tablespoon dijon mustard
- 3 cups milk
- 1 cup gruyere cheese, grated
- - another 1 tsp. salt
- - freshly ground pepper
- - fresh chives for garnish
How To Make ali's potato gruyere chowder

Step 1In a large pot, cook the bacon according to package directions, until browned and crisp. Cool and chop into small pieces. Set aside.

Step 2In the same pot over med-high heat, add the onions, shallot and garlic. (add a little olive oil if needed.) Saute for 5 min. or until the onions start to get soft.

Step 3Add the diced potatoes and 1 tsp salt, saute for about 2 minutes. Add the mustard and milk. Bring to a boil, then simmer for about 25 minutes, or until potatoes are soft and soup thickens.

Step 4Whisk in the Gruyere cheese, another tsp. of salt, and a few pinches of pepper. Garnish with the bacon and chives.
