2Chop onion and peppers into small squares. Wash and slice potatoes into small slices.
3Saute onion and peppers in bacon fat.
4Stir in potatoes and add 2 Tbsp butter.
Cook, stirring frequently, over medium heat, scraping up bits of onion and peppers as you stir. Keep cooking until potatoes are soft. Add salt and pepper. (**NOTE** add more butter as needed while cooking mixture.)
5Set aside potatoes.
Add butter to pan and cook eggs (to your taste).
6Plate and serve potatoes with bacon and eggs.
* NOTE * Instead of serving bacon on the side, crumble saved bacon and stir in with potato mixture at the end of Step 4 (above); you might also want to chop up a sweet little tomato and mix in.
