Ingredients

  • - bacon
  • - fingerling potatoes, all colors
  • 1/2 - onion
  • - sweet peppers (yellow, red and orange)
  • 2+ tablespoons butter
  • - salt and pepper

How To Make ali's fried taters

  • Step 1
Fry bacon in large pan and set aside.
  • Step 2
Chop onion and peppers into small squares. Wash and slice potatoes into small slices.
  • Step 3
Saute onion and peppers in bacon fat.
  • Step 4
Stir in potatoes and add 2 Tbsp butter. Cook, stirring frequently, over medium heat, scraping up bits of onion and peppers as you stir. Keep cooking until potatoes are soft. Add salt and pepper. (**NOTE** add more butter as needed while cooking mixture.)
  • Step 5
Set aside potatoes. Add butter to pan and cook eggs (to your taste).
  • Step 6
Plate and serve potatoes with bacon and eggs. * NOTE * Instead of serving bacon on the side, crumble saved bacon and stir in with potato mixture at the end of Step 4 (above); you might also want to chop up a sweet little tomato and mix in.
