3 Cheese Scallop Potatoes

Wanted a different type of scallop potatoe, so I came up with this and now this is the recipe that is requested now.

  • 4 c
    thinly sliced potatoes with skin on
  • 1
    onion, small chopped
  • 3 clove
    fine chopped garlic
  • 1 tsp
  • 3 Tbsp
  • 4-6 Tbsp
  • 1/4 c
    chives (fresh or dried)
  • 1-1/4 c
    half n half
  • 1 tsp
  • 1/2 tsp
  • 1 tsp
    dried mustard
  • 24 oz
    shredded cheddar cheese mix
  • 1/2 c
    parmigiano-reggiano, grated
  • 1 c
    blue cheese crumbled
  • 1 pkg
    smoked gouda cheese (optional)

How to Make 3 Cheese Scallop Potatoes


  1. In boiling water, add sliced potatoes and parboil about 6-8 minutes ONLY. Drain
  2. In frying pan, saute butter with onion, chives and garlic for about 3-5 minutes.
  3. In bowl, add flour, salt, pepper, paprika and mustard and mix.
  4. Whisk slowly into butter/onion mixture till pasty.
  5. Whisk in Half N Half on medium low heat, and whisk until it begins to thicken.
  6. In buttered 9 x 13 baking dish, you will be doing 2 layers of each: potatoes, sauce & cheeses
  7. First Layer: Potatoes
    Second Layer: Sauce
    Third Layer: Cheeses (Note: Add all the blue cheese here only)
  8. Repeat Layers ending with cheeses
  9. Note: If it looks too dry, add more Half N Half(but not too much to flood it)
  10. Bake uncovered at 350 for 35-50 minutes or till potatoes are tender and cheeses are melted and golden brown.
  11. Remove from oven and let sit for 5 minutes to set
