3 cheese scallop potatoes

Wanted a different type of scallop potatoe, so I came up with this and now this is the recipe that is requested now.

Ingredients

  • 4 cups thinly sliced potatoes with skin on
  • 1 - onion, small chopped
  • 3 cloves fine chopped garlic
  • 1 teaspoon salt
  • 3 tablespoons flour
  • 4-6 tablespoons butter
  • 1/4 cup chives (fresh or dried)
  • 1-1/4 cup half n half
  • 1 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon dried mustard
  • 24 ounces shredded cheddar cheese mix
  • 1/2 cup parmigiano-reggiano, grated
  • 1 cup blue cheese crumbled
  • 1 package smoked gouda cheese (optional)

How To Make 3 cheese scallop potatoes

  • Step 1
    In boiling water, add sliced potatoes and parboil about 6-8 minutes ONLY. Drain
  • Step 2
    In frying pan, saute butter with onion, chives and garlic for about 3-5 minutes.
  • Step 3
    In bowl, add flour, salt, pepper, paprika and mustard and mix.
  • Step 4
    Whisk slowly into butter/onion mixture till pasty.
  • Step 5
    Whisk in Half N Half on medium low heat, and whisk until it begins to thicken.
  • Step 6
    In buttered 9 x 13 baking dish, you will be doing 2 layers of each: potatoes, sauce & cheeses
  • Step 7
    First Layer: Potatoes Second Layer: Sauce Third Layer: Cheeses (Note: Add all the blue cheese here only)
  • Step 8
    Repeat Layers ending with cheeses
  • Step 9
    Note: If it looks too dry, add more Half N Half(but not too much to flood it)
  • Step 10
    Bake uncovered at 350 for 35-50 minutes or till potatoes are tender and cheeses are melted and golden brown.
  • Step 11
    Remove from oven and let sit for 5 minutes to set
