vegetable couscous

I made the best Coucous today and wanted to share it.Taste the broth before adding salt,you may not need salt if broth is salted already.You can use vegetable or beef broth. Water if you like,it just won't be as flavorful. Any combination of vegetables are good,it's a good way to clean out your refrigerator of leftovers.

Ingredients

  • 2 tablespoons oil
  • 2 tablespoons butter
  • 1/4 cup carrots, minced
  • 1/4 cup mushrooms, minched
  • 1/4 cup onions, minced
  • 1/4 cup zucchini,minced
  • - salt,black pepper,granulated garlic,to taste
  • 2 3/4 cups chicken broth
  • 1 1/2 cups couscous

How To Make vegetable couscous

  • Step 1
    In a skillet,heat oil and melt butter, sauté all vegetables until just done. Season with salt,pepper and granulated garlic Set aside. In a saucepan, bring broth to a boil. Add couscous and remove from heat and allow to sit 5 minutes. Add vegetables. Fluff with a fork. Be sure to allow the couscous to absorb the liquid.
