Ingredients For tomato and blue cheese pasta salad

  • 1 pkg
    trottole or rigatoni pasta
  • 2 lb
    grape tomatoes
  • 4 oz
    arugula or spring mix lettuce
  • 6 oz
    crumbled blue cheese
  • 1 tsp
    kosher salt
  • 5 Tbsp
    olive oil, extra virgin
  • 3 Tbsp
    assorted fresh herbs, such as basil, dill, oregano
  • 2 Tbsp
    balsamic vinegar

How To Make tomato and blue cheese pasta salad

    Prepare pasta according to package directions
  • 2
    Toss together hot pasta, olive oil, balsamic vinegar and assorted herbs

    Cool completely

    Stir tomatoes and cheese into pasta mixture
  • 5
    Just before serving stir in arugula or spring mix lettuce, adding salt and pepper to taste
