Ingredients

  • 1 pkg
    trottole or rigatoni pasta
  • 2 lb
    grape tomatoes
  • 4 oz
    arugula or spring mix lettuce
  • 6 oz
    crumbled blue cheese
  • 1 tsp
    kosher salt
  • 5 Tbsp
    olive oil, extra virgin
  • 3 Tbsp
    assorted fresh herbs, such as basil, dill, oregano
  • 2 Tbsp
    balsamic vinegar

How to Make Tomato and Blue Cheese Pasta Salad

Step-by-Step

  1. Prepare pasta according to package directions
  2. Toss together hot pasta, olive oil, balsamic vinegar and assorted herbs
  3. Cool completely
  4. Stir tomatoes and cheese into pasta mixture
  5. Just before serving stir in arugula or spring mix lettuce, adding salt and pepper to taste
