Ingredients

  • 1 package trottole or rigatoni pasta
  • 2 pounds grape tomatoes
  • 4 ounces arugula or spring mix lettuce
  • 6 ounces crumbled blue cheese
  • 1 teaspoon kosher salt
  • 5 tablespoons olive oil, extra virgin
  • 3 tablespoons assorted fresh herbs, such as basil, dill, oregano
  • 2 tablespoons balsamic vinegar

How To Make tomato and blue cheese pasta salad

  • Step 1
    Prepare pasta according to package directions
  • Step 2
    Toss together hot pasta, olive oil, balsamic vinegar and assorted herbs
  • Step 3
    Cool completely
  • Step 4
    Stir tomatoes and cheese into pasta mixture
  • Step 5
    Just before serving stir in arugula or spring mix lettuce, adding salt and pepper to taste
