super creamy mac & cheese

I threw this together one night & my whole family loved it...since then, i have to make it at least once a week. I sometimes add in chopped ham, chicken, turkey, ground beef, tuna, or even chopped up hot dogs. broccoli, peas & corn are good veggie add-ins too. just stir in your meat and/or veggie choice before topping with the crumbs & cheese. you can also use different pasta, like rotini or ziti (i use a 1 lb box).

Ingredients

  • 2 cups elbow macaroni
  • 1/2 cup butter
  • 1/2 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 6 cups lowfat milk
  • 2 cups cheddar cheese, shredded
  • 1 cup saltine cracker crumbs

How To Make super creamy mac & cheese

  • Step 1
    cook pasta according to package directions, drain & set aside, covered.
  • Step 2
    melt butter in a large sauce pan with the salt & pepper.
  • Step 3
    whisk in the flour to make a thick paste.
  • Step 4
    whisk in the milk & stir constantly over medium heat until thickened.
  • Step 5
    stir in 1-1/2 cup of the cheese until melted & smooth.
  • Step 6
    put pasta & sauce into 3 qt casserole dish, stir to combine.
  • Step 7
    sprinkle cracker crumbs over pasta & sauce evenly.
  • Step 8
    sprinkle remaining half cup of cheese over top.
  • Step 9
    bake in 350 degree oven for about 30 minutes, until cheese on top is melted & crumbs are golden brown.
  • Step 10
    cool ten minutes before serving. makes 12 1 cup servings.
