Ingredients
- 1 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 medium vidalia sweet onion, sliced
- 1 cup pickled jalapeno slices
- 1 pound uncooked elbow macaroni
- 2 3/4 tablespoons margarine, divided
- 1/4 cup all purpose flour
- 2 cups milk
- 1 cup heavy cream
- 1/2 cup pickled jalapeno liquid
- 8 ounces monterey jack cheese, shredded
- 8 ounces cream cheese, softened
- 1 cup panko bread crumbs
How To Make seattle macaroni and cheese

Step 1Preheat oven to 350 degrees F.

Step 2Coat a 13- x 9-inch baking dish with cooking spray. Add shredded Parmesan cheese.

Step 3Heat olive oil in a large skillet over medium heat. Add sliced vidalia onion and jalapeno slices and saute for 8 minutes until tender. Remove from heat and set aside.

Step 4Cook macaroni according to package directions; drain.

Step 5Melt 2 tablespoons margarine in a large saucepan over medium heat. Gradually whisk in milk, heavy cream and jalapeno liquid until smooth; cook, whisking constantly, 8 to 10 minutes or until slightly thickened. Whisk in monterey jack cheese and cream cheese until smooth.

Step 6Remove from heat and stir in sauteed onion mixture and macaroni.

Step 7Pour macaroni mixture into the prepared baking dish. Stir in breadcrumbs and remaining margarine with the macaroni mixture.

Step 8Bake in the preheated oven for 30 minutes or until golden and bubbly. Let stand for 5 minutes before serving.
