This new macaroni and cheese recipe I created is filled with toppings from a Seattle hot dog.

Ingredients

  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 medium vidalia sweet onion, sliced
  • 1 cup pickled jalapeno slices
  • 1 pound uncooked elbow macaroni
  • 2 3/4 tablespoons margarine, divided
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup pickled jalapeno liquid
  • 8 ounces monterey jack cheese, shredded
  • 8 ounces cream cheese, softened
  • 1 cup panko bread crumbs

How To Make seattle macaroni and cheese

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Coat a 13- x 9-inch baking dish with cooking spray. Add shredded Parmesan cheese.
  • Step 3
    Heat olive oil in a large skillet over medium heat. Add sliced vidalia onion and jalapeno slices and saute for 8 minutes until tender. Remove from heat and set aside.
  • Step 4
    Cook macaroni according to package directions; drain.
  • Step 5
    Melt 2 tablespoons margarine in a large saucepan over medium heat. Gradually whisk in milk, heavy cream and jalapeno liquid until smooth; cook, whisking constantly, 8 to 10 minutes or until slightly thickened. Whisk in monterey jack cheese and cream cheese until smooth.
  • Step 6
    Remove from heat and stir in sauteed onion mixture and macaroni.
  • Step 7
    Pour macaroni mixture into the prepared baking dish. Stir in breadcrumbs and remaining margarine with the macaroni mixture.
  • Step 8
    Bake in the preheated oven for 30 minutes or until golden and bubbly. Let stand for 5 minutes before serving.
