  • 1 c
    orzo pasta, uncooked
  • 1/4 tsp
    saffron threads
  • 1 Tbsp
    grated orange rind
  • 2 Tbsp
    orange juice
  • 3 Tbsp
    olive oil
  • 1/3 c
    dried cherries, chopped
  • 3 Tbsp
    slivered almonds, toasted
  • 2
    green onions, thinly sliced
  • ·
    salt and pepper to taste

How to Make Saffron Orzo with Dried Cherries


  1. Combine first three ingredients in a saucepan and bring to a boil. Cover, reduce heat, and simmer eight (8) minutes, Drain and set aside.
  2. Toast almonds and set aside.
  3. Whisk orange juice, orange rind, and olive oil together in a small bowl.
  4. Combine cooled and drained orzo with dried cherries, almonds, and green onions. Toss with dressing. Season with salt and pepper to taste.
