Ingredients
- 6 cups water
- 1 cup orzo pasta, uncooked
- 1/4 teaspoon saffron threads
- 1 tablespoon grated orange rind
- 2 tablespoons orange juice
- 3 tablespoons olive oil
- 1/3 cup dried cherries, chopped
- 3 tablespoons slivered almonds, toasted
- 2 - green onions, thinly sliced
- - salt and pepper to taste
How To Make saffron orzo with dried cherries

Step 1Combine first three ingredients in a saucepan and bring to a boil. Cover, reduce heat, and simmer eight (8) minutes, Drain and set aside.

Step 2Toast almonds and set aside.

Step 3Whisk orange juice, orange rind, and olive oil together in a small bowl.

Step 4Combine cooled and drained orzo with dried cherries, almonds, and green onions. Toss with dressing. Season with salt and pepper to taste.
