My family and friends request that I bring homemade macaroni and cheese to all our dinners.

Ingredients

  • 1 package large elbow macaroni 12 oz
  • 6-8 cups water, boiling (salted)
  • 1/2 stick butter
  • 2 tablespoons all purpose flour
  • 5-5 1/2 cups milk or combination of milk and evaporated milk
  • 2/3 cup velveeta or american cheese
  • 2 cups cheddar cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup panko bread crumbs
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarse black pepper
  • 1/2 cup cheddar cheese, shredded reserved for top

How To Make requested homemade macaroni and cheese

  • Step 1
    Cook macaroni in boiling salted water 4 minutes. Drain and rinse. Set aside.
  • Step 2
    In large saucepan or dutch oven, melt butter over low heat, being careful not to burn. Add flour. Cook for 1-2 minutes. Do not brown.
  • Step 3
    Add milk slowly, stirring constantly. Stir in cheeses; cook over low heat until cheese is mostly melted .
  • Step 4
    Add salt, pepper, paprika and bread crumbs. Add macaroni. Mix together gently.
  • Step 5
    Pour into extra large buttered (or cooking spray) baking or casserole dish.
  • Step 6
    Bake uncovered at 350 degrees for 25 minutes. Remove from oven then add 1/2 cup shredded cheese on top. Sprinkle with additional paprika. Bake at 400 degrees until lightly browned on top. About 15 minutes. May brown under broiler for a couple of minutes. Watch carefully to prevent burning.

    NOTE: Use a large deep size deep casserole dish or divide into two casserole dishes as this recipe makes a lot.
