I created another side dish recipe for prime rib. It will be on a fettuccine dish, filled with sauteed mushrooms, and it's inspired by Kinder's prime rib seasoning.

Ingredients

  • 1 1/2 cups shaved Parmesan cheese
  • 3/4 cup pine nuts
  • 6 tablespoons prime rib seasoning, divided
  • 16 ounces uncooked fettuccine
  • 1 tablespoon olive oil
  • 2 tablespoons margarine, divided
  • 6 white button mushrooms, sliced
  • 2 shiitake mushrooms, sliced
  • 1 tablespoon Dijon mustard
  • 1/2 cup steak sauce mixed with brown sugar
  • 1 tablespoon Creole seasoning
  • 1 1/2 tablespoons crushed red pepper flakes
  • 1/2 cup all-purpose flour
  • 1 cup heavy cream
  • 3/4 cup fat-free milk
  • 8 ounces cream cheese, softened
  • 8 ounces sharp cheddar cheese, shredded

How To Make prime fettuccine with sauteed mushrooms

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Coat the bottom and sides of a 13- x 9-inch baking dish with cooking spray.
  • Step 3
    Add shaved Parmesan cheese, pine nuts, and 2 tablespoons prime rib seasoning; mix well.
  • Step 4
    Cook fettuccine according to package directions. Transfer to a large bowl. Season with 2 tablespoons prime rib seasoning; toss well until coated.
  • Step 5
    Heat the olive oil and 1 tablespoon of margarine in a large, deep skillet over medium heat. Add sliced white button and shiitake mushrooms and saute for 8 minutes or until browned.
  • Step 6
    Stir in 2 tablespoons prime rib seasoning, Dijon mustard, steak sauce/brown sugar, Creole seasoning, and crushed red pepper flakes. Remove from the heat. Set aside.
  • Step 7
    In a medium saucepan over medium heat, melt the remaining margarine. Whisk in the flour until completely smooth and let cook 1 minute until golden brown.
  • Step 8
    Slowly whisk in the heavy cream, milk, and cream cheese until the mixture is smooth. Season with the remaining prime rib seasoning.
  • Step 9
    Bring to a simmer over medium heat for 5 minutes until the sauce is bubbly and thickened.
  • Step 10
    Remove the sauce from the heat and whisk in the shredded sharp cheddar cheese until melted. Add cooked fettuccine and sauteed mushroom mixture and stir until combined.
  • Step 11
    Pour over a prepared baking dish and spread evenly. Bake in the preheated oven for 20 minutes or until bubbly and golden brown.
