Ingredients
- 4 tablespoons butter
- 1/4 can panko breadcrumbs
- 1 pound pasta of choice
- 1 pound assorted fresh mushrooms
- 1/4 cup heavy cream
- 1 cup mascarpone at room temp
- 2 tablespoons chopped chives
- shaved percorino romano
- salt and fresh cracked pepper
How To Make pasta with mushrooms & mascarpone

Step 1Melt I tbsp of butter in a saucepan. Add the bread crumbs and brown them. Remove from heat and set aside. Cook the pasta in a large pot of boiling salted water. Drain reserving 1 1/2 cups pasta water.

Step 2Add the remaining 3 tbsp of butter to a skillet. Once melted add the mushrooms and season with salt and pepper. Cook until tender and lightly browned. Add the cream and let most evaporate. Stir in the Mascarpone and 1 cup of the reserved pasta water. Cook until creamy. Add the pasta into the pan with the remaining pasta water. Cook until creamy. Taste and adjust for salt. Stir in the chives.

Step 3Transfer to a plate and top with bread crumbs. Top with shaved Pecorino Romano and fresh cracked pepper.
