I set out to recreate the unique taste of Noodles Romanoff after forgetting this childhood favorite for decades. At one time in the 1960s, a box of this could usually be found in my mom’s cabinet to pull out for a quick side dish on a busy school night. (Some of you might also remember Rice-A-Roni, along with Kraft Mac & Cheese, the only one that truly lasted.) This recipe is a mash-up of several copycat recipes I found online and played with. The key is the amount of Worcestershire sauce. I use a lesser amount to make the sauce, then taste it right before serving to adjust. =^..^=

Ingredients

  • 12 ounces narrow egg noodles
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons salt
  • 2-3 teaspoons Worcestershire sauce
  • 4 ounces cream cheese, cubed
  • 1 1/2 cups milk
  • 4 ounces shredded cheddar cheese
  • 1/4 cup sour cream
  • some paprika, “for pretty,” optional

How To Make noodles romanoff

    Step 1
    Put on a pot of water to start boiling first. This is what actually takes the longest time. Get out your ingredients to make sure you have everything.
  • Sauté the garlic
    Step 2
    Start the sauce. Melt the butter in a skillet over medium-low heat, then stir in the garlic and sauté until fragrant.
  • Add cream cheese
    Step 3
    Stir in the salt and ONLY 2 teaspoons of the Worcestershire sauce. Then add the cream cheese cubes and stir around until melted.
  • Cook the noodles
    Step 4
    Back to the noodles… Stir into the boiling water all the noodles in the bag. You’ll decide later if you need them all, depending on the sauce/noodle ratio you prefer. Cook as directed on the package to the degree of “doneness” you prefer.
  • Stir in milk and cheese
    Step 5
    Return to the sauce. Add the milk and stir until heated through and smooth. Melt in the cheddar cheese.
  • Add the sour cream.
    Step 6
    Stir in the sour cream. Continue cooking until heated through. If the sauce thickens more than you like, thin it with a little milk. IMPORTANT STEP! Now taste the sauce and see if you think it needs more Worcestershire sauce. I think it depends on the brand of cream cheese used. Maybe?
  • Add cooked noodles to the sauce.
    Step 7
    When the noodles are done, drain well, and add 3/4 of them to the sauce. Stir together well. Decide if you want the rest of the noodles in the sauce.
  • Add paprika.
    Step 8
    Serve Noodles Romanoff with a sprinkle of paprika, “for pretty,” as Mom would say. Enjoy! =^..^=
