mom's cheesiest mac & cheese

My mom makes this recipe for just about every family function we have, everyone loves it. I get as much of the cheese pre-grated as I can, it helps cut down on prep time.

Ingredients

  • 1 1/2 packages large elbow macaroni (16-oz pkg.)
  • 2-4 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • - lots of freshly ground black pepper
  • 1 pound sharp or extra sharp chedder, shredded
  • 1/4 pound mild chedder, shredded
  • 1/4 pound mozzarella cheese, shredded
  • 1/4 pound swiss cheese, shredded
  • 1/4 pound colby jack cheese, shredded
  • - parmesan cheese, shredded (for topping, to taste)

How To Make mom's cheesiest mac & cheese

  • Step 1
    Prepare pasta according to package directions for al dente. Set aside.
  • Step 2
    Mix cheese together in a large bowl (excluding Parmesan)
  • Step 3
    In a small bowl add salt, pepper and flour to cold milk, whisk. Set aside.
  • Step 4
    Spoon 1/3 of the pasta into a lightly greased baking dish (11x15 or 5qt); add dots of butter, top with 1/3 cheese mixture, pour 1/3 milk mixture over cheese (stir each time) – repeat until ingredients are gone.
  • Step 5
    Top with Parmesan add pepper to taste.
  • Step 6
    Bake at 350° for 25-30 minutes or until bubbly and slightly brown on the top. Let stand 10 minutes before serving.
