Ingredients
- 8 ounces penne pasta
- 1 cup mix asian mushrooms
- 2 tablespoons olive oil
- 1 tablespoon red miso past
- 4 tablespoons soft butter
- 6 cloves garlic minced
- 1/2 cup heavy cream
- 2 stalks green onions diced
- salt and pepper
How To Make miso mushroom pasta

Step 1Cook the pasta in boiling salted water until almost al dente. Drain reserving 1/4 cup pasta water. Set aside. Add the 1 tbsp of oil to a large skillet. Chop the mushrooms and add to the skillet and saute until browned. Remove the mushrooms and set aside. Mix the red miso and butter together until well incorporated. Add the remaining tbsp of oil to skillet. Add the garlic and saute 20 seconds. Add the mushrooms back to skillet.

Step 2Add the miso butter mixture, heavy cream and reserved pasta water. Bring to a boil and add the pasta into the sauce. Cook about 5 minutes. Stirring frequently.

Step 3Taste and season with salt and pepper. Garnish with green onions.
