Ingredients
- 1 small box fresh mushrooms (any kind)
- 1 small white onion sliced
- 1 1/2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon dried oregano
- 2 teaspoons chopped garlic
- 1 3/4 cups chicken stock
- 1 cup orzo pasta
- 1/2 cup 1/2 and 1/2
- 3/4 cup frozen peas
- 1/2 cup parmesan cheese
- 2 tablespoons softened butter
How To Make maddy's creamy mushroom orzo

Step 1Slice onions and mushrooms. On medium heat, fry the mushrooms and onions in the olive oil until they are tender. Add the oregano, garlic, salt and pepper and fry for one minute more.

Step 2Turn the heat down to simmer. Add the Orzo, chicken stock and 1/2 and 1/2 to the pan. Simmer uncovered until the pasta is al dente...about 20 minutes. If not done after this time, add a bit more stock.

Step 3When the pasta is done, turn off the heat. Stir in the parmesan cheese and peas. Stir in 2 tablespoons of soft butter and serve.
