I have over 100 Mac & Cheese recipes. I am constantly looking for the "Ultimate Mac & Cheese Recipe"...This is my favorite one so far. It is also the easiest. Charlie and I can eat the whole bowl in one sitting. We absolutely love this recipe!

Ingredients
- 1/4 cup butter
- 2 cups macaroni, elbow
- 1 cup cottage cheese, small curd
- 8 ounces colby cheese, shredded
- 4 ounces colby & monterey jack cheese, shredded
- 1/2 teaspoon konriko hot'n spicy creole seasoning (you can substitute tony chachere's creole seasoning)
- 2 3/4 cups boiling water

Step 1Spread butter on bottom of casserole dish.

Step 2Add rest of ingredients except for the water in a large bowl. Mix together well then place in buttered casserole dish.

Step 3Add the boiling water. Bake uncovered at 350 degrees for about 1 hour. Let set for about 10 minutes before serving.
