Macaroni and Cheese Casserole

My husband loves macaroni and cheese. I have several recipes that I alternate so that we don't get tired of it.

  • 16 oz
    elbow macaroni
  • 1 lb
    cheddar cheese, grated
  • 8 oz
    monterey jack cheese with jalapeno peppers, grated
  • 1 tsp
  • 1 tsp
    black pepper
  • 1 tsp
    dry mustard
  • 1/2 stick
  • 8 oz
    cream cheese, softened
  • 1
    egg, beaten
  • 5 oz
    evaporated milk

How to Make Macaroni and Cheese Casserole


  1. Boil macaroni in salted water, al dente (about 6 minutes). Drain, do not rinse.
  2. Add butter and cream cheese, 8 ounces grated cheddar cheese, and grated pepper jack cheese. Combine until cheeses are melted.
  3. Combine salt, pepper, dry mustard into a beaten egg. Temper the egg by adding a teaspoon of the hot mixture to the egg and stirring. Add to the macaroni mixture.
  4. Pour into a greased casserole dish. Pour the evaporated milk of the casserole and let soak in. Bake in 350 degree oven for 45 minutes.
