mac n cheese before there were boxes

I have tested over 100 mac n cheese recipes and they all fell short until I found a book published in the 60's. I made a few tweeks and added more or less and this is as close to perfect as I remembered before the boxes came out.

Ingredients
- 7 ounces package elbow macaroni
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
- 2 cups milk
- 1 cup each- shredded colby, cheddar, monterey jack
- 1/4 cup grated parmesan
- 2 teaspoons parsley fresh or flakes
- 2 tablespoons buttered bread crumbs

Step 1cook pasta as directed on package. drain. DO NOT RINSE WITH WATER. in med saucepan , melt butter. stir in flour and salt. blend in milk. cook and stir until thickened. mix cheeses together reserve 1/4 cup cheese. add cheese to sauce stir until melted. mix in macaroni and parsley. pour into 2 qt casserole. top with reserved cheese and bread crumbs.

Step 2Bake at 350 for 25 min. Note- any cheese combination works.
