I have tested over 100 mac n cheese recipes and they all fell short until I found a book published in the 60's. I made a few tweeks and added more or less and this is as close to perfect as I remembered before the boxes came out.
1cook pasta as directed on package. drain. DO NOT RINSE WITH WATER. in med saucepan , melt butter. stir in flour and salt. blend in milk. cook and stir until thickened. mix cheeses together reserve 1/4 cup cheese. add cheese to sauce stir until melted. mix in macaroni and parsley. pour into 2 qt casserole. top with reserved cheese and bread crumbs.
2Bake at 350 for 25 min.
Note- any cheese combination works.
