This is my version of a tasty couscous. I like to serve it with stewed chicken. You can make it vegetarian by using vegetable broth but when I serve it with chicken I use chicken broth,beef broth with a beef dish.
1Saute onion in the butter until the onion is translucent. Add chicken broth, lemon juice,garlic powder,salt and pepper. Bring to a boil. Remove from heat, stir in couscous, cover and let stand for 5 minutes to absorb the liquid. Heat oil,saute zucchini and onion,season with salt and pepper to taste, cook until zucchini is tender.Stir in zucchini,fluff couscous with a fork.Lightly fold in pimiento and parsley.
