    ears of corn
  • 8 oz
    small shell pasta
  • 1/4 c
  • 1/2 c
    fresh basil chopped
  • 4 oz
    feta cheese
  • 1/2 c
    parmigiano-reggiano, grated
  • ·
    salt and pepper to taste

How to Make Grilled Corn Mac n Cheese


  1. Grill the corn to get a little char on the kernels. Cut the kernels off the cob.
  2. Cook the pasta until done in boiling salted water. Drain reserving 1/2 cup pasta water.
  3. Place the pasta in a pot and add the pasta water, milk, and basil. Heat 2 minutes. Stir in the cheeses and cook until melted. Season with salt and pepper to taste.
