Creamy and a great dish to use up some of the fresh corn available now.

Ingredients

  • 2 - ears of corn
  • 8 ounces small shell pasta
  • 1/4 cup buttermilk
  • 1/2 cup fresh basil chopped
  • 4 ounces feta cheese
  • 1/2 cup parmigiano-reggiano, grated
  • - salt and pepper to taste

How To Make grilled corn mac n cheese

  • Step 1
    Grill the corn to get a little char on the kernels. Cut the kernels off the cob.
  • Step 2
    Cook the pasta until done in boiling salted water. Drain reserving 1/2 cup pasta water.
  • Step 3
    Place the pasta in a pot and add the pasta water, milk, and basil. Heat 2 minutes. Stir in the cheeses and cook until melted. Season with salt and pepper to taste.
