golden orzo with greek dressing

Turmeric has been touted lately as a very healthy ingredient. I found this in a Greek recipe book in the library, took a picture with my phone. Decided to clear out my old photos and found this. Don't remember the title of the book :(

Ingredients
- 1 teaspoon turmeric
- 1 pound orzo pasta, uncooked
- 1/2 cup olive oil, extra virgin
- 1/4 teaspoon white pepper
- 1 teaspoon salt
- 1/2 cup parsley, finely minced
- 1/8 cup lemon juice
- 1 tablespoon capers, drained
- 1/2 teaspoon sugar
- 1 cup sun dried tomatoes, julienned
- 1/2 cup kalamata olives, chopped
- 1 cup feta cheese, crumbled
How To Make golden orzo with greek dressing

Step 1Bring salted water to a boil. Add turmeric and orzo. Cook for 10 minutes, or until done, drain and rinse orzo. Place in serving bowl and let cool slightly while mixing dressing.

Step 2Combine other ingredients except olives, tomatoes and feta. Whisk together until oil is emulsified.

Step 3Add olives, tomatoes. Stir to combine. Sprinkle feta on top before serving. Can be chilled or served at room temperature.
