golden orzo with greek dressing

Turmeric has been touted lately as a very healthy ingredient. I found this in a Greek recipe book in the library, took a picture with my phone. Decided to clear out my old photos and found this. Don't remember the title of the book :(

Ingredients

  • 1 teaspoon turmeric
  • 1 pound orzo pasta, uncooked
  • 1/2 cup olive oil, extra virgin
  • 1/4 teaspoon white pepper
  • 1 teaspoon salt
  • 1/2 cup parsley, finely minced
  • 1/8 cup lemon juice
  • 1 tablespoon capers, drained
  • 1/2 teaspoon sugar
  • 1 cup sun dried tomatoes, julienned
  • 1/2 cup kalamata olives, chopped
  • 1 cup feta cheese, crumbled

How To Make golden orzo with greek dressing

  • Step 1
    Bring salted water to a boil. Add turmeric and orzo. Cook for 10 minutes, or until done, drain and rinse orzo. Place in serving bowl and let cool slightly while mixing dressing.
  • Step 2
    Combine other ingredients except olives, tomatoes and feta. Whisk together until oil is emulsified.
  • Step 3
    Add olives, tomatoes. Stir to combine. Sprinkle feta on top before serving. Can be chilled or served at room temperature.
