Ingredients

  • 8 ounces spaghetti
  • salt
  • FOR THE SAUCE
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 8 cloves garlic minced
  • 1/4 cup white wine
  • 2 cups fresh basil chopped
  • salt and pepper
  • 1 cup freshly grated pecorino romano plus more for serving

How To Make garlic and basil pasta sauce

  • Step 1
    Cook spaghetti in boiling salted water until almost al dente.
  • Step 2
    While spaghetti is cooking. Add the oil and butter to a large pan big enough to hold the spaghetti. Add the garlic and cook 1 minutes. Do not let it burn. Add the wine and let most evaporate. Add the basil. Cook 2 minutes. Add the spaghetti and about 1 cup pasta water and stir.
  • Step 3
    Add the cheese and cook until melted. Let sit for a couple of minutes until the pasta has absorbed all the fluid. Taste and season with salt and pepper. Serve garnished with cheese.
