Ingredients
- 8 ounces fresh fettuccine pasta
- salt
- SAUCE
- 2 tablespoons butter
- 1 cup half and half
- 3/4 cup parmigiano-reggiano shredded
- 1 cup monterey jack
- salt and fresh cracked pepper
- 1/2 teaspoon freshly grated nutmeg
- fresh chopped parsley
How To Make fettuccine with two cheese sauce & nutmeg

Step 1Place a large pot of water over high heat. Bring to a rolling boil. Add the salt and bring back to a rolling boil. Add the fresh pasta and reduce the heat. Boil about 3 minutes. Drain and reserve 1 cup pasta water.

Step 2To make the sauce Place a saucepan big enough to accommodate the pasta. Add the butter and let it melt.

Step 3Add the half and half and nutmeg. Bring to a gentle simmer. Slowly add in the Parmigiano cheese whisking constantly to let it melt. Add the Jack cheese and keep whisking until cheese is melted. Whisk in 1/2 cup of pasta water. Add the pasta and stir letting it cook in the sauce a little more. Add more pasta water if to dry.

Step 4Taste and season with salt and pepper. Stir in the parsley. Serve immediately
