Ingredients

  • 8 oz
    fresh fettuccine pasta
  • ·
    salt
  • SAUCE

  • 2 Tbsp
    butter
  • 1 c
    half and half
  • 3/4 c
    parmigiano-reggiano shredded
  • 1 c
    monterey jack
  • ·
    salt and fresh cracked pepper
  • 1/2 tsp
    freshly grated nutmeg
  • ·
    fresh chopped parsley

How to Make Fettuccine with Two Cheese Sauce & Nutmeg

Step-by-Step

  1. Place a large pot of water over high heat. Bring to a rolling boil. Add the salt and bring back to a rolling boil. Add the fresh pasta and reduce the heat. Boil about 3 minutes. Drain and reserve 1 cup pasta water.
  2. To make the sauce
    Place a saucepan big enough to accommodate the pasta. Add the butter and let it melt.
  3. Add the half and half and nutmeg. Bring to a gentle simmer. Slowly add in the Parmigiano cheese whisking constantly to let it melt. Add the Jack cheese and keep whisking until cheese is melted. Whisk in 1/2 cup of pasta water. Add the pasta and stir letting it cook in the sauce a little more. Add more pasta water if to dry.
  4. Taste and season with salt and pepper. Stir in the parsley. Serve immediately
