Ingredients

  • 8 ounces fresh fettuccine pasta
  • salt
  • SAUCE
  • 2 tablespoons butter
  • 1 cup half and half
  • 3/4 cup parmigiano-reggiano shredded
  • 1 cup monterey jack
  • salt and fresh cracked pepper
  • 1/2 teaspoon freshly grated nutmeg
  • fresh chopped parsley

How To Make fettuccine with two cheese sauce & nutmeg

  • Step 1
    Place a large pot of water over high heat. Bring to a rolling boil. Add the salt and bring back to a rolling boil. Add the fresh pasta and reduce the heat. Boil about 3 minutes. Drain and reserve 1 cup pasta water.
  • Step 2
    To make the sauce Place a saucepan big enough to accommodate the pasta. Add the butter and let it melt.
  • Step 3
    Add the half and half and nutmeg. Bring to a gentle simmer. Slowly add in the Parmigiano cheese whisking constantly to let it melt. Add the Jack cheese and keep whisking until cheese is melted. Whisk in 1/2 cup of pasta water. Add the pasta and stir letting it cook in the sauce a little more. Add more pasta water if to dry.
  • Step 4
    Taste and season with salt and pepper. Stir in the parsley. Serve immediately
