Ingredients

  • 1 medium butternut squash cooked and mashed
  • 4 tablespoons butter
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 8 ounces fresh mushroom sliced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • - salt and pepper to taste
  • 1 cup grated parmesan cheese
  • 8 ounces fettuccine pasta cooked and drained
  • 2 tablespoons fresh or dried sage

How To Make fettuccine w butternut squash mushroom cream sauce

  • Step 1
    Melt the butter in a large saute pan. Saute the onion and mushrooms over medium heat for 5 minutes. Add the garlic and cook 3 minutes.
  • Step 2
    Add the squash, chicken broth, and cream. Bring to a simmer and cook stirring until reduced a bit. Add the parmesan cheese and stir and cook until melted.
  • Step 3
    Add the fettuccine tossing to coat well. Top with fresh or dried sage
